Even easier: just use canned mango puree (available at Indian or Caribbean food stores).
Dang, that is really very clever. I was not pleased with the pieces of mango and had not yet convinced myself that I cared enough to puree it. The recipes I found said, "Add mango". Not so useful. Thanks!
Sometimes the puree is pre-sweetened, in which case just skip adding the extra sugar.
